Sweet Bees: Airy Dessert with Apricot Jam

Bees make honey, which means they themselves cause associations with something sweet and tasty. This dessert will be a real decoration of any table, causing pleasant summer associations.

You will need:

  • 4 eggs;
  • 200 g of sugar;
  • 120 g of flour;
  • baking powder for the dough;
  • a pinch of salt;
  • apricot jam;
  • canned peaches or apricots;
  • black and white chocolate;
  • gelatin;
  • vanilla extract;
  • a pack of butter;
  • 250 g cream or sour cream;
  • a pack of cream cheese;
  • almond chips for decoration;
  • rectangular deep baking dish;
  • long spatula;
  • parchment paper

Air sponge cake has two main secrets. First you need to beat the eggs. Separate the whites from the yolks, and whisk first with a pinch of salt. After the mass has increased several times, you can add sugar and yolks. The second secret - flour should be sifted through a sieve with baking powder, and only then put into the dough (120 g of flour and sugar go into the sponge cake). For more airiness, add a third of the oil pack. Cover the mold with a baking mat or parchment paper and cover with dough. Bake a biscuit at a temperature of 180 degrees for about 30 minutes.

The top layer of biscuit should be cut off, and the remaining part spread with apricot jam. If you use homemade jam, add it a little less because of the higher sugar content.

Mix the remaining butter and sugar with cream or fat cream, cottage cheese and vanilla extract. You can add vanilla seeds, it will make the cream more beautiful.

Cool the soaked biscuit cover with a layer of cream and put to cool in the refrigerator.

Getting to the formation of "bees". Dab the halves of peaches or apricots with a napkin of excess syrup and place on parchment paper. Melt black and white chocolate. Black do the stripes and heads of the "bees", which form on parchment. Send the blanks to freeze in the refrigerator or freezer (in the latter case, just a few minutes).

Wings are formed from confectionery almond chips. Glue each head to the apricot with warm melted chocolate. Paint the eyes with white chocolate, adding dark pupils. Again we send to freeze.

Dissolve gelatin according to the instructions on the package and make jelly based on apricot jam. If using jam, add more water. Cover jam with frozen biscuit and send to freeze in refrigerator.

The final stage is the decoration of the biscuit "bees".
